Truffle hunting in Italy is a walk in the woods with a local hunter and a trained dog, usually followed by a tasting. The experience depends on three choices: the region, the season and the kind of outing you book. This guide explains each one, with the official harvest dates and the 2026 truffle fairs.

The short answer: for white truffles, go in fall. Piedmont’s season opens on October 1, and Tuscany’s opens on September 10, according to the regional calendars. Choose the Langhe around Alba for the most famous white truffle, Tuscany for easy day trips from Florence, and Umbria for the black truffle of Norcia in winter. A living tradition recognized by UNESCO

Truffle hunting is more than a tourist activity in Italy. In 2021, UNESCO added “Truffle hunting and extraction in Italy, traditional knowledge and practice” to its Representative List of the Intangible Cultural Heritage of Humanity. The UNESCO listing describes a two-step practice (checked September 2026). First, the hunter finds the truffle with the help of a trained dog. Then the hunter digs it out with a special spade that does not disturb the soil.

In other words, the know-how matters as much as the truffle. Hunters pass it on orally, through stories and local expressions. As a result, a good guide will talk about the woods, the trees and the weather, not just the find.

Where to go truffle hunting in Italy

Truffles grow in many Italian regions, but three areas dominate the visitor experience. Each one suits a different kind of trip.

Piedmont: the Langhe and Alba

The hills around Alba are home to the most famous white truffle in the world, the tartufo bianco d’Alba. Here the hunter is often called a trifolao, the local dialect word. The area is also Barolo country, so a truffle morning pairs naturally with a Barolo wine tour in the Langhe. However, Alba is far from the classic Rome-Florence-Venice route, so plan at least two nights.

Tuscany: San Miniato and the Crete Senesi

Tuscany is the easiest choice for first-time visitors, because hunts run close to Florence and Siena. The region recognizes five white truffle areas, including the Colline Sanminiatesi around San Miniato and the Crete Senesi south of Siena, according to Vetrina Toscana, the Tuscan regional food portal (checked September 2026). For example, you can combine a truffle hunt in Tuscany with a Chianti wine tour from Florence or a Montalcino Brunello wine tour on another day.

Umbria: Norcia and the black truffle

Umbria is the land of the prized black truffle, Tuber melanosporum, often sold as the black truffle of Norcia. It is a winter truffle, so Umbria is the region to choose between December and early spring. White vs. black truffle seasons

Every Italian region sets its own legal harvest calendar, so the dates differ. That matters for your trip, because a “truffle hunt” out of season usually means a demonstration with a hidden truffle.

  • Piedmont: all harvesting stops from September 1 to 30. White truffle season then runs from October 1 to January 31, according to the Alba truffle fair. The Piedmont regional government moved the opening to October 1 in 2024, with black truffle season starting on December 15 (both checked September 2026).
  • Tuscany: white truffle season runs from September 10 to December 31, according to Vetrina Toscana (checked September 2026).
  • Umbria: the prized black truffle is harvested in winter. Check the current regional calendar before booking, since dates can change.

In practice, October and November are the sweet spot for white truffles in both Piedmont and Tuscany. By contrast, winter is the time for black truffles in Umbria. Also remember that weather drives the harvest, so a dry fall can mean fewer and smaller truffles.

How a truffle hunt works

Most hunts follow the same pattern. First, you meet the tartufaio and the dog at a farm or at the edge of the woods. Then you walk for an hour or two while the dog searches, usually among oaks, poplars, willows or hazelnut trees.

When the dog finds a scent, it starts digging. At that point, the hunter calls it off and digs carefully with a small spade, so the truffle and the soil stay intact. Afterward, the hunter refills the hole to protect the ground for next season.

Traditionally, the dog breed is often the Lagotto Romagnolo, though many mixed breeds hunt too. Pigs were used in the past, but they tend to eat the truffles and damage the ground. Today, Italy’s national truffle law (Law 752 of 1985) allows the search only with dogs, no more than two per hunter, and a small spade, as its Article 12 states (checked September 2026).

What a good truffle hunting experience includes

Not all truffle tours are equal. Before you book, check these points on the listing:

  • A real hunt in the woods: look for a licensed hunter and a working dog, not only a demonstration in a garden.
  • Season honesty: in the off-season, a good operator says clearly which truffle you might find, or that the hunt is a demonstration.
  • A tasting or a meal: most good experiences end with truffle dishes, such as fresh pasta or eggs with shaved truffle.
  • Small groups: dogs and hunters work better with fewer people, and you see more.
  • Clear logistics: check the meeting point, whether transport from the city is included and what shoes to wear.

Also ask whether you can buy truffles after the hunt, and how to carry them home. Fresh truffles lose aroma within days, so eat them in Italy when you can.

Truffle fairs in fall 2026

A truffle fair adds markets, tastings and cooking shows to your trip. Two of the most important fall fairs have confirmed 2026 dates.
